Kitchen hack of the week: 

We all hate wasting food, especially a lovely loaf of bread. Take that half loaf of ciabatta leftover from your family lunch and sprinkle a bit of water over it. Pop it in the heated oven for a few minutes to get it back to being soft and fresh, and perfectly ready for that delicious home-made chicken and veggie soup for your supper.

Health tip of the week:

Offices can be a difficult place to maintain a healthy diet…someone has brought in doughnuts for everyone, it’s someone’s birthday and so there is cake, someone suggests that the office orders take away for lunch…the list goes on. Make a habit of taking in your own cooler bag with lunch and snacks to keep you on the right track. Leftovers from supper are always a win for lunch the next day so try to make an extra serving if you can. Protein snacks like nuts, boiled eggs, slices of cheese and fresh fruit with natural yoghurt will keep your blood sugar levels stable, preventing that afternoon hunt for sugar.

This White Chicken Chilli is a variation of the well known Tex-Mex Chilli Con Carne, but is  a show-stopper in its own right.  It boasts all the usual spices, poached & shredded chicken, white beans, corn kernels and cream cheese. Add a South African twist by serving it with your own homemade mealie bread – it’s all in the kit!
