Kitchen hack: Put those extra herbs to use

Don’t you hate it when you buy fresh herbs for a meal and then the leftover herbs go off in the fridge? Don’t let them go to waste – chop them up and mix them with some tomato paste and freeze in ice trays next time you are cooking a curry, stew or mince, throw a few of the frozen blocks in!

Health tip of the week: Feel the “beet”

Dance to the “beet” of your own drum and while you are at it, make sure you get some of these bad boys in your diet. Beetroot are packed with essential nutrients which play a role in improving blood vessel health, keeping your gut healthy and protecting your immune system. Feel intimidated by them though and not sure how to cook them? Simply scrub, chop the top and tail off, cut into cubes, sprinkle over some olive oil, salt, pepper and chili flakes and cook in a 180 C oven for 30- 40 minutes. Divine as a side to pretty much anything.

This dish will warm the cockles of your heart – creamily satisfying with just enough spiciness to please the discerning palate. Sweet potatoes are a great source of fibre, vitamins and minerals, especially potassium and the tomato and bell pepper provide a whole lot of vitamin C. Our soya mince is made from one ingredient – organic, non-GMO soybeans. No nasties – just lots of protein.

Baked Leek, Mushroom & Feta Pasta

A baked pasta dish involving tomato and cheese is always yummy and this is no exception. We douse sautéed leeks, mushrooms, zucchini and garlic in our special tomato passata, mix it with penne pasta and give it a generous sprinkling of creamy feta cheese before popping it into the oven. Quick, easy, nutritious and delicious!

Lemon Paneer

We love  our Lemon Chicken dish. The tanginess produced by leeks, garlic, white wine, lemon and olives is sublime. We had to make a vegetarian version and who would have thought how well Paneer, the Indian whey cheese, would blend. We used creamy risotto rice as a backdrop to the show and WOW we loved the outcome!
