Kitchen hack: White wine substitutes 

Don’t you hate it when you have a fabulous recipe to try but it calls for white wine and you are all out? 

No problem. You can use half white wine vinegar or apple cider vinegar of the amount called for and top it up to the required volume with water. 

You could even use lemon juice in the same way but your flavour will be ever so slightly fruity, which nine times out of ten is delicious.

Health tip of the week: Fresh fruit vs fruit juice

Don’t make the mistake of thinking fresh fruit and fruit juice are equal. Fresh fruit contains fibre and because you have to actually chew it, it is digested slower and does not cause a huge blood sugar spike. Fruit juice on the other hand has most of the fibre removed and because it is in liquid form, you end up consuming so much more. Hello, blood sugar spike and ultimately blood sugar drop. Stick to the real deal and quench your thirst with water.

Layered Lentil Cottage Pie with Sun-dried Tomato Pesto

A new take on a vegetarian Cottage Pie – cheesy sweet potato is good enough to just eat out of the bowl but add the layer of carrots and a lentil mix that has been cooked up with onion, tomato paste, balsamic vinegar and a strong vegetable stock and you have a winner. Served with an absolutely delicious sun-dried tomato pesto.
