Kitchen hack: Using the whole chicken

Roast chicken for dinner? Don’t throw away the carcass. Pop it in a pot or slow cooker, cover with water and simmer for a good few hours. The flavour and nutrients will seep from the bones, leaving you with a delicious chicken stock. Use this as a base for a hearty, healthy chicken and vegetable soup.

Health tip of the week: Choosing the right yoghurt

Yoghurt is a great addition to your diet – an excellent source of calcium and a decent dose of protein. Be careful of brands that have a lot of added sugar though – typically your fruit flavoured ones will have a fruit syrup of a sort added to them to give the flavour. Rather choose fresh from the farm, untampered with, natural yoghurt which will be higher in probiotics (good for your gut!), lower in sugar and higher in those heart-healthy fats.

Cordon Bleu Chicken Bake

You don’t have to be a French chef to put this together, whatever the name says! It’s really simple. Chicken breasts are cut open and flattened, covered with ham and cheddar cheese and rolled up. Fit them snugly into an oven dish, cover with our pre-made white sauce and grated cheddar and bake. The richness of this dish is offset by broccoli on the side.

A more nutritious and more filling version of your normal broccoli cheese, this dish is loaded with extra veg, a bit of Parmesan to pop the flavour of the cheddar and hidden cubes of baked halloumi. This deliciousness is topped with wholewheat breadcrumbs that bake to a golden crust.

It lends itself particularly well to pork medallions cut from the tenderloin. Lightly steamed or boiled broccoli adds a wonderful pop of colour as well as nutrients.
