Baby marrow and sweetcorn fritters

You will need (for 1 serving - two to three small fritters)

  • 2 medium sized baby marrows, grated
  • 1/4 of a tin (100 g) of sweetcorn
  • 1 egg, beaten
  • Salt and pepper
  • 1/4 tsp dried mixed herbs
  • 1/4 of a cup of whole-wheat flour
  • 1/4 of a cup of grated cheddar cheese
  1. Combine all the ingredients in a bowl and mix well.
  2. Heat some oil or butter in a pan over a medium heat.
  3. Drop a spoonful of the fritter mixture into the pan, repeating unti you have 2 - 3 fritters.
  4. Allow to cook on the one side until the edges are golden and the mixture has begun to firm up. Flip over and cook the other side.
