You will need (for 1 serving - two to three small fritters)
- 2 medium sized baby marrows, grated
- 1/4 of a tin (100 g) of sweetcorn
- 1 egg, beaten
- Salt and pepper
- 1/4 tsp dried mixed herbs
- 1/4 of a cup of whole-wheat flour
- 1/4 of a cup of grated cheddar cheese
- Combine all the ingredients in a bowl and mix well.
- Heat some oil or butter in a pan over a medium heat.
- Drop a spoonful of the fritter mixture into the pan, repeating unti you have 2 - 3 fritters.
- Allow to cook on the one side until the edges are golden and the mixture has begun to firm up. Flip over and cook the other side.
