Oat crumpets

I concocted these when I was desperately trying to find something for Jackson (now 14 months old) to eat for breakfast when he started refusing to be spoon fed. Showing off his independence, he wanted to feed himself. Allowing a one year old to use his hands to feed himself yoghurt or oats porridge meant 90% ended up smeared on his face, his table and the walls and very little actually went into his mouth.

These crumpets – for lack of a better word – are so quick and easy to make and can be topped with whatever your heart desires – Jacksons preference is peanut butter or plain cream cheese.

What you need (for 1 serving)

  • 1 egg, cracked into a bowl and beaten with a fork
  • 1/3 of a cup of raw oats
  • 1/3 of a banana, mashed
  • 1 TBSP of a good quality unsweetened whey protein powder

Mix all of these together. In a pan, melt some butter over a medium heat. Spoon the mixture into 7 – 8 cm wide crumpets. Allow to cook slowly on the one side and then flip over.  Allow to cool and then top with whatever your heart desires…
